About the Chef
Originally from east-end Toronto, Chef Peter Angus started his culinary journey
in the Niagara Region, catering weddings in the summer and working as a restaurant
line cook in the winter. With the terroir culinary movement strong in Niagara,
Chef Peter cultivated this locally driven philosophy and has developed it over his career.
In Toronto, he worked in some of the city's top restaurants covering a wide variety of
culinary styles from high end Italian, modern fine dining, and seafood.
Since arriving here on Prince Edward Island, he has combined his culinary experience with
the bounty of beautiful products that PEI has to offer.
From working closely with Island farmers and fishers, to foraging for wild chanterelles
in the fall and fiddleheads in the spring, Chef Peter has demonstrated his passion
for locally sourced food. One look at his menu at Shaw's Hotel will illustrate his commitment
to local and sustainable agriculture, aquaculture, and fisheries in the region.
